Something Sweet

The Mr. made one of my all-time favorite desserts last night and then it hit me--I haven't shared the recipe with all of my friends in Blogland!  So, "You're welcome," in advance.  WARNING:  Be prepared for chocolate-y, banana-y, cinnamon sugar-y goodness that will make your mouth water by the mere vision of the wonder that is Nutella.

Dessert Quesadilla

You'll need (yields 2 servings):

2 small tortillas
1/2 c. of Nutella
1/2 of a banana sliced very thin
2 tbs cinnamon and sugar (equal parts of both)
2 tbs butter

1. Take your first tortilla and spread nutella on one half.

2. Place slice bananas on top of the nutella spread.

3. Sprinkle cinnamon and sugar over the banana and nutella spread.

4. Fold over to make into a quesadilla.

5. Melt 1 tbs. of butter in a pan over medium heat.  Place quesadilla in pan until golden brown (around 1-2 minutes).

6. Flip and immediately sprinkle the cooked side with cinnamon and sugar.  Let the other side brown for 1-2 minutes then remove from pan and place on the side you cooked first.  Immediately sprinkle with cinnamon sugar and ENJOY! Repeat for a 2nd serving (you know you want one)!

Summer Lovin'

Have I mentioned how much I love these long summer days and breezy nights out on the porch with the mister?  Because I do.  I love these (sing it with me) su-ummer...ni-iiights!  Okay, I think John Travolta and Olivia Newton-John definitely said sang it better.  So, for your viewing and listening pleasure, and because Grease remains in my top favorite summer movies of all time:

I love things that remind me of summer.  A couple of those items are Banana Boat and s'mores.  I love laying by the pool all day smelling all coconuty, then everyone gathering 'round the campfire at night.  Well, we didn't get around to buying a fire pit this year, so roasting over anything other than our gas stove is out of the question.  Not to mention I'm the crazy lady running around with Clorox wipes because I don't like to get sticky.  So s'mores with melted chocolatey goodness oozing out the sides isn't exactly my cup of tea.  Never fear, S'mores-on-a-Stick are here!  That's right--bite sized chocolatey and marshmallowy goodness!  And of course, supa simple because...well, it's s'mores.

You'll need:

1 cup of chocolate chips
1/2 bag of large marshmallow puffs
handful of small pretzel sticks
1 cup of graham crackers (ground up)

Melt the chocolate of your choice (the Mr. likes Hershey's dark chocolate chips).  Make your assembly line of pretzels, marshmallows, chocolate, and graham crackers and start dippin'!

Let them cool for an hour or two (or overnight if you fall asleep on the couch, oops!) and enjoy!

What's for Dessert?

Pineapple Upside-Down Cake from AllRecipes

It's dessert for breakfast this morning!  And anything that starts with a stick of butter has to be good great!  Here's everything you'll need:

1/2 cup butter

1 1/2 cups brown sugar

1 (20 ounce) can sliced pineapple

10 maraschino cherries

1 (18.25 ounce) package white cake mix

cast iron skillet to hold all of your deliciousness

Now let's get baking!  Melt the butter over medium high heat in the iron skillet. 

 Remove from the heat and sprinkle the brown sugar evenly to cover the butter.

 Next, arrange pineapple rings around the bottom of the pan, one layer deep. Place a maraschino cherry into the center of each pineapple ring.  **Note:  the Mr. and I aren't huge cherry fans, so I did without and it still turned out great!

 Prepare the cake mix as directed on the box, substitute some of the pineapple juice for some of the liquid in the directions.

Pour the batter over the pineapple layer and bake as directed by the cake mix directions. Cool for 10 minutes then...

 ...flip her over and see the sugary, buttery, pineapple goodness.

Do not let the cake cool too much or it will be stuck to the pan.  Okay, if you haven't already, dig in and enjoy!
